Homemade Chicken Soup

INGREDIENTS

  1. Chicken legs 3 pieces
  2. Potato 3 pieces
  3. Carrot 1 piece
  4. Onion 1 piece
  5. Vermicelli 30 g
  6. Greens 50 g
  7. Salt taste
  8. The ground white pepper taste
  9. The ground black pepper taste
  10. Dried tarragon pinch

INSTRUCTIONS FOR COOKING

Put the washed chicken legs in a saucepan, pour cold water, and put on an intense fire. When the water boils, reduce the heat to a minimum, salt to taste, put the unpeeled washed onion and close the lid. After 30 minutes, we catch the onion, put the carrot, and cut it into cubes. After 5 minutes, add peeled and chopped potatoes, and taste for salt. Cook for another 10-15 minutes.

Then add the vermicelli, and cook for 15 minutes. After we put the spices (a pinch of tarragon, allspice, and white pepper, a little black), turn them off after 5 minutes. Let the soup brew for 10 minutes. In a bowl of soup, you can put half a boiled egg and finely chopped greens.

Vermicelli Soup with Chicken

Chicken Vermicelli Soup is a hearty and delicious soup. Light broth, some chicken meat, carrots, onions, potatoes and a little noodles – a great combination that will appeal to almost everyone. This soup will appeal to both adults and children. You can use other pasta instead of vermicelli.

Ingredients

  2. chicken fillet 500 g
  3. potatoes 250 g
  4. vermicelli 100 g
  5. onion 120 g
  6. carrots 100 g
  7. salt to taste
  8. ground black pepper to taste

The weight of the ingredients is indicated in the purified form. If you buy vegetables specifically for making soup, take them with a small margin.

The number of ingredients indicated for cooking in a three-liter saucepan.

Preparation of food

First, we need to cook the broth. I take chicken fillet for broth, although, of course, usually broth is not cooked from the fillet, as it costs more, and gives less taste and richness to the broth. However, I don’t really like too rich, fatty broth, and it’s much easier to work with fillet (it doesn’t need to be cleaned, there is no waste left). If you want to make a really rich chicken broth, then you should use a whole chicken or chicken, you need to cook it for about an hour over low heat.

So, wash and cut the chicken fillet into medium-sized pieces.

Bring to a boil, then reduce the power of the stove to almost an average level and cook for about 15 minutes, periodically removing the foam. 

If you want to get delicious meat, then you need to add salt as soon as it boils, and if you want to get a beautiful transparent broth, then you need to add salt at the end of cooking. When the water boils, it is advisable not to cover the pan with a lid, then the broth will be transparent.

While the chicken is cooking in the pot, prepare the vegetables for the soup. There they are, waiting for me. Peel potatoes and carrots.

Randomly chop the onion and send it to a pan with preheated sunflower oil for frying at medium power. Salt a little. Fry, stirring occasionally.

After 5 minutes, add carrots to the onion, which is good for soup only when fried, just boiled carrots, in general, no. Carrots only release color and flavor when roasted. After another 5 minutes, remove the pan from the heat.

Cut potatoes into small sticks or cubes. Wash the potatoes in a colander with cold water. Thus, we remove the starch that stood out on potato slices. Starch makes the liquid in the soup cloudy, so it is advisable to remove it as far as possible.

When the chicken is cooked, take out the pieces of meat from the broth. Let them cool a little and cut them into pieces of the size that you would like to see in the soup.

Add potatoes to boiling broth.

After 3-4 minutes, add onions with carrots and chicken meat

Next, add the vermicelli and mix so that it does not stick together.

Now you should salt the soup to taste, and pepper. Cook as much as indicated on the package with vermicelli for minus 2 minutes. We remove the pan from the stove, wait a couple of minutes and you can call the household to the table for lunch. By the way, undercooked vermicelli (like potatoes) will not remain, you should not be afraid, it is cooked in the hot soup while cooling.

Chicken vermicelli soup is ready. Pour it into bowls and sprinkle with herbs. Enjoy your meal!
